Ingredients
Salad leaves
1 ripe pear sliced
Handful of walnuts, roughly chopped
3 spring onions chopped
Cooked quinoa
1 tbsp. English mustard
6 tbsp. olive oil
3 tbsp. cider vinegar
2 tbsp. honey
1 clove of garlic crushed
Salt and pepper to taste
Method
For the dressing, place all of the ingredients in a bowl and whisk until thick and creamy.
Arrange the cooked quinoa, salad, spring onions, pears and walnuts in a salad bowl, just before serving drizzle with the dressing and mix well.
