Make this tangy and crunchy salad for a quick lunch or a light side for a summer BBQ.
You'll need:
1 pack of Quinola's White & Red Express Quinoa
1/2 small red cabbage shredded
2 spring onions sliced
2 carrots cut into thin julienne strips
1 small red pepper sliced into thin strips
handful of chopped coriander
2 tbsp chopped peanuts
1 lime to garnish
For the dressing (Add to a bowl):
1 lime juice
2tsp sesame or olive oil
2 heaped tsp of peanut butter
2tsp soy sauce
1tsp fresh ginger grated
Place all of the ingredients into a large bowl, and add the salad dressing and mix well.
