Chocolate chip Quinola Cookies

100g unsalted butter, softened
85g (1/2 cup) coconut sugar
1 egg
1 teaspoon pure vanilla extract
150g (1 cup) white coconut flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
(1/2 cup) uncooked pearl Quinola grains
100g chopped dark chocolate
1/3 cup) chopped walnuts

Mix the butter and coconut sugar in a large bowl until creamy and beat the egg in a separate bowl.

Add the baking powder, coconut flour, uncooked Quinoa grains, vanilla extract and cinnamon to the bowl and mix with the sugar and butter.

When combined, add the egg and continue to mix thoroughly, adding the chopped chocolate and walnuts.

Separate the mixture into balls and flatten, placing on a lined baking tray.

Allow a little space between each, then place in a preheated oven at 150 degrees for about 15 minutes until slightly golden.

Cool on a rack and enjoy warm!
