Ingredients
1 pack of Puy lentils and wholegrain quinola
2 medium carrots, peeled and julienne cut
150g beansprouts
1 red pepper, deeded and sliced thinly
6 radish sliced thinly
handful of fresh coriander
handful of salted peanuts, chopped
2 tbsp Lucy’s ginger and sesame dressing (or similar)
Method
Place all of the ingredients in a large salad bowl and mix well
