Breakfast smoothie bowl with quinoa
Ingredients
100ml greek yoghurt
Handful of fresh berries such as raspberries, strawberries and blueberries
1tbs honey
Quinoa
Fresh fruit and seeds to garnish

Red Thai curry with quinoa

Dark chocolate and quinoa brownies
Ingredients70g dark chocolate100g unsalted butter2 heaped tbsp cocoa powder200g caster sugar1tsp gluten free baking powder2 eggs50g quinoa flour1tsp vanilla essencepinch of salt
PREPARATIONPreheat an oven to 160˚C and butter and line a 20 cm square baking tin.
METHOD
Melt the chocolate and butter together in a bowl on a very low setting in a microwave or in a bowl over a pan of hot water.In a mixer, beat the eggs and sugar together until creamy and fold in the rest of ingredients together with butter and chocolate mix.Bake for 30 minutes.
Parsnip, mushroom and kale stew with quinoa
Ingredients2 tbsp vegetable oil2 onions diced2 garlic cloves1 celery stick sliced250g parsnip diced into large chunks150g mushrooms sliced150g kale sliced into ribbons1tsp Worcester sauce1tsp smoked paprikasalt and pepper500ml vegetable stockcooked quinoa to serve Method Heat the oil in a large deep frying pan.
