Quinoa, thyme and beetroot soup
This is a heart warming soup bursting with flavor and goodness. Adding quinoa not only gives you extra protein and fibre, it also keeps you feeling fuller for longer as it releases energy into your body at a slower rate. This soup is therefore an amazing tasty starter, or main.
Cheesy broccoli cups
Ingredients
3 eggs whisked
1 small carrot grated
130g cheese grated
60g cooked peas
50g cooked chopped broccoli
salt to taste
Method
Mix all of the ingredients together in a large mixing bowl. Line a muffin tin with paper muffin cases. Scoop the mix into each case and bake in an oven (160 ̊C) for 20 minutes.
