Lunch box packed with cheesy quinoa and broccoli cups, carrots and cucumber

Cheesy broccoli cups

Ingredients 3 eggs whisked 1 small carrot grated 130g cheese grated 60g cooked peas 50g cooked chopped broccoli salt to taste Method Mix all of the ingredients together in a large mixing bowl. Line a muffin tin with paper muffin cases. Scoop the mix into each case and bake in an oven (160 ̊C) for 20 minutes.
