Wholegrain Pesto Quinoa

1 small yellow sweet pepper diced
1 small red sweet pepper diced
1small courgette diced
3 spring onions sliced
a handful of cherry tomatoes quartered
parmesan shavings
basil leaves to garnish, optional
drizzle of olive oil
pesto

Method

Dice peppers and courgette, quarter the tomatoes and slice the spring onions. Place in a mixing bowl.
Microwave quinoa according to the instructions, mix well with all the chopped vegetables, add 1 tbsp of pesto, drizzle of olive oil and mix again. Serve warm with parmesan shaving and basil leaves.
