HEALTHY EGG-FRIED QUINOA
Ingredients
  • 1 pack pearl and black quinoa
  • 2tbs sesame oil
  • 1 carrot diced
  • 3 spring onion sliced
  • 60g edamame beans
  • 60g green beans
  • 1 garlic clove chopped
  • 1 tbsp soy sauce
  • 1 egg beaten
  • 50g cashew nuts
Pour sesame oil into a large wok and place it on a high heat. Add the ginger and garlic and stir well, then add the rest of the vegetables, cashew nuts and stir fry them for a few minutes. Add the quinoa and soy sauce, mix well, push it on one side of the wok and add the beaten egg on the opposite side. Leave it to cook a little, then mix in the quinoa and vegetables. Stir vigorously to coat the quinoa. Serve.
