Vegetable skewers with pesto quinola

Plate of quinoa with rocket and three skewers with pepper, courgette, halloumi, tomato and mushroom. A jar of salad dressing on the side.

Ingredients
Vegetables skewers:
Peppers red, yellow
Mushrooms
Red onion
Aubergine
Cherry tomatoes
Express Quinola Quinoa

Pesto:
Ingredients
About 40g of fresh basil
1 garlic clove chopped finely
20g pine nuts
40g parmesan cheese finely grated
100ml olive oil
Salt and pepper to taste

Pesto: Blend all of the ingredients with an electric hand blender.
