Italian Quinola Bowl

Bowl of Italian styled quinoa with tomatoes, sliced onion and mozzarella

1 pack of Italian Quinola

1 pack of Italian mozzarella torn into pieces

1 pack of mixed cherry tomatoes

handful of green olives sliced

handful of fresh basil leaves

1tbsp of pine nuts

1 small red onion sliced

1 tbsp of extra virgin olive oil

salt and peeper

balsamic vinegar

Simply slice the cherry tomatoes, olives and onions. Chop the fresh basil and mix with the olive oil. In a small frying pan on a low heat toast the pine nuts until slightly brown. In a large bowl place the Italian quinoa, add tomatoes, onion, olives and torn mozzarella cheese. Drizzle with the basil oil and balsamic vinegar and top it with pine nuts. Season with salt and pepper. Serve immediately.
