Three Bean, Avocado and Kale Salad with Lime and Tahini Dressing

Ingredients

30g fresh kale, steamed 

100g mixed beans (peas, broad beans, edamame beans) 

1 avocado peeled and sliced 

pea shoots salad to garnish 

sesame seeds to sprinkle 

50g white cooked quinoa 

50g red cooked quinoa 

 

 

 

dressing: 

80g natural or greek yoghurt 

1 heaped tsp tahini 

20ml water 

juices and zest half a lime 

1/2 tsp turmeric 

1/2tsp sesame recipe 

1/2 tsp salt 

 

 

For the dressing, mix all of the ingredients well together. Place the pre cooked quinoa in the base of a large salad bowl and arrange the rest of the ingredients as you wish on top.
