Sabina’s mango & pomegranate quinoa salad

Here is a wonderful recipe sent in by Sabina.

The ingredients you will need:

400 g Quinoa

1 ripe yet firm mango, diced

1 Pomegranate, capsules removed

100 g pistachio, coarsely chopped

75 g Pea shoots or spinach

Olive oil

Red wine or apple cider vinegar

Salt and Pepper to taste

Method:

Cook the quinoa according to packet instructions. You can cook the quinoa with vegetable stock to add more flavour. Once cooked, place in blast chiller.

In a salad bowl, combine all ingredients with the quinoa.

Whisk the olive oil and vinegar and season to taste. Dress the salad as desired. Serve cold.
