Sabina’s mango & pomegranate quinoa salad
Here is a wonderful recipe sent in by Sabina.
The ingredients you will need:
400 g Quinoa
1 ripe yet firm mango, diced
1 Pomegranate, capsules removed
100 g pistachio, coarsely chopped
75 g Pea shoots or spinach
Red wine or apple cider vinegar
Salt and Pepper to taste
Cook the quinoa according to packet instructions. Make sure to rinse the quinoa first. You can cook the quinoa with vegetable stock to add more flavour. Once cooked, place in blast chiller.
In a salad bowl, combine all ingredients with the quinoa.
Whisk the olive oil and vinegar and season to taste. Dress the salad as desired. Serve cold.
