Red & Black Quinoa with beetroot, toasted seeds and greens

Beetroot, toasted seeds and green leaves with red and pearl quinoaThis was done on a bed of cooked red and pearl quinoa.

The ingredients used were:

  • diced beetroot
  • toasted hemp seeds, pine nuts and pumpkin seeds
  • rocket salad
  • parsely
  • an olive oil and lemon vinaigrette

Simple really. Feel free to use whichever seeds are in your cupboard, but the toasted hemp seeds accentuated the naturally nutty flavour of red quinoa.
