Three Beans, Avocado and Kale Salad with Lime and Tahini Dressing

Ingredients
  • 30g fresh kale, steamed

  • 100g mixed beans (peas, broad beans, edamame beans)

  • 1 avocado peeled and sliced

  • Pea shoots salad to garnish

  • Sesame seeds to sprinkle

  • 50g white cooked quinoa

  • 50g red cooked quinoa

PREPARATION

(serves 2)

For the dressing, mix all of the ingredients well together. Place the pre-cooked quinoa in the base of a large salad bowl and arrange the rest of the ingredients as you wish on top.

Dressing

Ingredients
  • 80g natural or greek yoghurt
  • 1 heaped tsp tahini
  • 20ml water
  • juices and zest half a lime
  • 1/2 tsp turmeric
  • 1/2tsp sesame recipe
  • 1/2 tsp salt
