Quinoa Mushrooms Quisotto

Ingredients
  • 400g of Pearl quinoa

  • 300g of fresh mushrooms

  • Parsley

  • 1 stock cube

  • Parmesan (flakes of nutritional yeast are a great vegan substitute)

  • Olive oil

  • 1 onion

  • Salt

  • Pepper

PREPARATION

Boil the quinoa for 12 minutes then drain.

In the meantime, chop the mushrooms and fry.

Brown the onion.

Add the quinoa with 1 pint of stock.

Once cooked add the mushrooms and parmesan.

Add the parsley.
