Preserved Lemon and crumbled goats cheese with black & pearl quinoa
Here is one of the dishes prepared for the Planet Organic tasting. Mix up some cooked Pearl and Black Quinola in about equal quantities and add the following to create a delicious salad. Anthony Demeter of Wild Honey needs to be credited with giving me the recipe idea by the way.
Ingredients for the quinoa salad:
- Preserved lemons that are thinly sliced and have their flesh taken out.
- Cooked broad beans.
- Crumbled goats cheese.
- A little chopped red chilli.
- Herbs: marjoram and mint.
- Vinagrette: olive oil, lemon juice (2/3rds,1/3rd) with a dash of honey.
