Organic Red Quinoa and Vegetable Soup

Serves 2


  • 1 cup of Quinola Red Quinoa (200g),
  • Mixed Vegetables – 1 Onion, 2 Carrots, 1 Parsnip, 2 Sticks of Celery, Handful of Mushrooms, 2 Spring Onions (including the green!)
  • 5 cups of Vegetable Stock
  • Olive oil, Thyme, Basil, 2 Cloves of Garlic


  • Chop onion, garlic, carrots, celery, mushrooms, parsnip, spring onions, herbs and sauté in olive oil for about 5 minutes in medium saucepan
  • After 10 minutes add vegetable stock and the Quinola Red Quinoa and simmer for a further 15 minutes then serve….

Half a mug of Quinoa grain = 1 person serving
